ONE "Green" Recipe

My husband says, "These taste like bananas!"  Thank you to my "little friend" who shared this GREEN Muffin Recipe.

2 c flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp finely ground salt
1/2 c applesauce
3/4 c syrup
3/4 c milk
1/4 c melted coconut oil
2 tsp vanilla extract
5-6 oz baby spinach, pureed
2 med, ripe bananas, mashed

Preheat oven to 350 degrees.  Whisk flour, baking powder, soda & salt.  In blender, blend applesauce, syrup, milk, oil, vanilla & spinach.  Add spinach mixture to flour.  Stir together.  Fold bananas.  Bake 25 minutes.  Store in fridge for ~4-5 days or freeze.  Yields 48 mini muffins (24 regular)!
